  • 2 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • ½ cup honey
  • 2–3 tbsp hot sauce
  • 1 tsp red pepper flakes
  • 1 tbsp butter
  • 1 pack Hawaiian rolls
  • 6 slices pepper jack cheese
  • Dill pickles
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp melted butter
  • Sesame seeds or everything seasoning (optional)

Preparation


  1. Preheat your grill for two-zone cooking, with one side set to medium-high heat and the other side set to low or indirect heat.
  2. In a small saucepan or foil pan, combine honey, hot sauce, red pepper flakes, and butter. Warm over low heat until fully combined, then set aside.
  3. Toss chicken thighs with olive oil and seasonings until evenly coated.
  4. Slice the Hawaiian rolls in half horizontally, keeping them connected.


Cooking Instructions

    Place chicken thighs directly on the grill grates and cook for 5–6 minutes per side, or until nicely charred and fully cooked through.

    During the final 1–2 minutes of cooking, brush the chicken generously with the hot honey sauce, allowing it to caramelize slightly over the heat without burning.

    Remove chicken from the grill and let rest for a few minutes before slicing or chopping into bite-sized pieces.

    Lightly toast the inside of the Hawaiian rolls on the grill until golden.

    Spread mayonnaise and Dijon mustard across the bottom layer of rolls. Layer with grilled chicken, pepper jack cheese, and pickles.

    Place the top buns over the sliders and brush with melted butter. Sprinkle with sesame seeds or everything seasoning if desired.

    Move the sliders to the indirect heat side of the grill, close the lid, and cook for 3–5 minutes until the cheese melts and the rolls are lightly toasted.

    Pull apart, serve hot, and watch them disappear fast.
